The BSG HandCraft booth at this year’s HomebrewCon in Baltimore will be pouring some homebrews from our staff, each highlighting different malts.

Tyrone Babione, CSR for BSG HandCraft, is contributing an American Black Ale with color from Patagonia Perla Negra, and a house specialty fruit-and-chili wheat beer using Rahr malts.

Here are Tyrone’s recipes:

Annie Get Your Wheat On

Batch size: 5 gallons
Target OG: 1.044
Target IBU: 25-26

Grain bill:

5 lbs Rahr 2-row
4 lbs Rahr White Wheat Malt
8 oz Simpsons Medium Crystal
1 lb rice hulls, or as needed

Single infusion mash at 150°F

Boil:

1.25 oz Hallertau @ 60′
0.75 oz Hallertau @ 10′
14 deseeded serrano chili peppers @ 10′

Cold side:

Cool wort to 64-66°F

Aerate/oxygenate & pitch with Safbrew WB-06

After primary fermentation is complete, add 4 lbs fresh pasteurized raspberres

 

Not Quite Dawson’s Evil Clone

Batch size: 5 gallons
Target OG: 1.054-1.056
Target IBU: approx. 60

Grain bill:

12.5 lbs Patagonia Extra Pale Malt

Mash at 149°F

1 lb Patagonia Perla Negra (crushed separately and cold-steeped for 24-72 hours, then separated and steeping liquid added to boil)

Boil:

0.5 oz Chinook @ 60′
1 oz Amarillo @ 10′
1 oz Centennial @ 10′
1 oz Chinook @ 10′
1 oz Amarillo @ flame out
1 oz Centennial @ flame out
1 oz Chinook @ flame out

Cold side:

Cool wort to 64-66°F

Aerate/oxygenate & pitch with Safale US-05
